Grapefruit Gin and Tonic

Image
A few weeks ago when we were out at a nearby restaurant, we had the most amazing cocktail. It was a gin and tonic, but with grapefruit flavored tonic. It was so delicious that I had to recreate it. The version we made at home was super simple, and so tasty that you have to give it a try! You only need 3 ingredients. How easy is that? The first step is to squeeze a grapefruit to get all that fresh juice out. Then you can slice up a second grapefruit to use as garnish. Now all you have to do is put your ingredients together. Throw in a slice or two of grapefruit into your glass and fill with ice. Add 2 ounces of your favorite gin. Then 4 ounces of tonic water. Finally add an ounce or two of your fresh grapefruit juice, and viola!  I think this is my husband's new favorite drink. Give it a try and let me know what you think in the comments below. Grapefruit Gin and Tonic Ingredients (makes 1-2 drinks) 2 oz. gin 4 oz. tonic water 2 grapefruits  Directions 1. Squeeze the juice of o...

Charcuterie Board for Two

Image
Hello everyone! I don't know about you, but I am really missing having parties and gatherings with friends. Even going out to eat isn't an option for most people. Just because we can't have a bunch of people over doesn't mean we can't have our own personal party! One of my favorite things about a party is a charcuterie board. I can't wait to share my tips with you, so let's jump right in and start our party for two! To start you'll need a board and a couple of small bowls or jars. Little bowls are perfect for nuts, jams, and spreads. You may also need a small spoon or cheese knife depending on what you decide to add to your board. Once you've got that, it's time to decide what to put on your board.  Since this is a board for two, I like to forget about the "rules" of what you should have. For your mini-party just put on things you love. I chose to use a soft, mild cheese (Port Salut) and a hard cheese with a bit more bite (Toscana soake...

Dalgona Coffee

Image
As promised, here is the easy, step-by-step process to make Dalgona Coffee (aka whipped coffee)! You don't need much to make this, and you probably already have all of the ingredients. You will need sugar, hot water, milk, and instant coffee. You have to use instant coffee for this. Regular coffee will not work. When I originally started making this, most people were using a whisk to mix this by hand. It can take 10 - 20 minutes of hand whisking. Please do yourself a favor and use an electric mixer. It will save you time and lots of energy! The measurements for this are super easy - equal parts sugar, water, and instant coffee. An individual serving is 1-2 tablespoons of each ingredient. I typically use 1.5 Tablespoons for one drink. This stores really well in the fridge, so you can make extra and have it ready to go for later in the week. I've tripled the recipe and stored the extra in an air-tight container and used it the following days and it was just as good! So...

Fruity Cereal Cookies

Image
I don't know about you, but I love sugar cookies. I make them more than any other cookie because they are always a crowd pleaser. I mean, what's not to love? They have just the right amount of sweetness and a hint of vanilla. But let's be honest, making the same thing over and over gets a little boring. Sometimes you have to shake things up a bit, so I decided to try a fun twist on this classic cookie by adding fruity cereal. Not only does it rev up the flavor, but it also adds some fun bursts of color! The recipe is so simple. The cookie dough comes together in just minutes. Plus, you don't have to refrigerate the dough before baking. These sweet treats freeze really well, too. ---------------------------------------------------------------------------------------------------------- Fruity Cereal Cookies Ingredients yields 2-3 dozen cookies 1 cup butter (softened) 1 1/4 cups granulated sugar 1 egg 2...

Cosmo-rita Cocktail

Image
Today is game day...you have food, decorations, and everything prepped and ready for your Super Bowl Party...but wait, what about drinks? If you need a quick and easy cocktail, I have one for you! I bet you already have all of the ingredients, so you won't have to run to the store to fight the people trying to buy wings at the last minute. This is a simple combination of a classic Cosmopolitan Cocktail and Margarita. The super easy recipe is below. If you really want to amp it up, try making some cranberry-lime ice cubes. They keep your drink nice and cold without diluting it. Simply use equal parts cranberry juice and water and squeeze in the juice of one lime. Cosmo-rita Cocktail (2 servings) Ingredients 4 oz. tequila 2 oz. triple sec 6 oz. cranberry juice cocktail juice of 1/2 a lime Directions Combine all ingredients in a cocktail shaker with ice and shake about 30 seconds until really cold. Strain into martini glasses or pour into ...
